If you're unable to complete the current visitors' requests you can simply reset them until you have progressed far enough in the game to access the items they are requesting!
To reset the visitors:
- Tap the Train Station
- Then tap the green locomotive icon
Your visitors will then get replaced by new visitors! You can do this as many times as necessary.
